Seasonings and Batter
Marinade Seasoning by far, this is our "must have" product and a Chef's best kept secret. Marinade Seasoning is used to tenderize and retain moisture for all proteins. Use in conjunction with Crispy Seasoning Batter for Sweet and Sour Pork or Chicken. Useage is 4% by weight and marinate 30 minutes or overnight.
Crispy Seasoning Batter is a dry batter used for light and crispy fried chicken or pork. "Double dredge" for extra coating before frying. Can also be used as a wet batter. Crispy Seasoning Batter is formulated to extend steam table holding time. We recommend twice-frying to for extra crispy coating.
Hot and Spicy Seasoning is the traditional flavor of Chinese 5-Spice, sugar, salt, lemon and spices, typically used to dust on fried wings, fried calamari, fried shrimp, fried fish fillets, and french fries. This is an amazing flavor - one of our best customers that uses Hot and Spicy Seasoning is a Mexican restaurant!
